CHANGES + INSPIRATION.

It's going to be an interesting end of summer/intro to fall around these parts. There are some changes about to take place at EBV & we are pretty excited. We're going to take some time off at the beginning of August, go on a much needed vacation & come back halfway through August with a new look, some new models, & of course, some killer new vintage.

I'm such a perfectionist when it comes to certain things. I'm constantly looking for ways to grow & change...in my own life, in my relationship with the hunk & the kids, and in my business. When things get stagnant, I get antsy (& admittedly, a little irritable). I feel like this upcoming road trip out west may be exactly what I need to find the inspiration I'm looking for. Stay tuned, ladies. Shit's about to get exciting.

SUMMER ROAD TRIPPIN.

The hunk & I are leaving in a couple of weeks to embark on an adventure that I have been dreaming about for what seems like forever.  An Alabama>Arizona road trip, with quite a few planned stops along the way. My very best friend is getting married in what looks like the most beautiful place I've ever seen. The pictures take your breath away. I guess I will know what it looks like for real very soon!
After the wedding, I am finally going to get to check a big one off my bucket list: the Grand Canyon. I've wanted to see the Grand Canyon since I was a child. Seems like I would've gotten around to that by now, but it just hasn't happened. The hunk one upped my idea of visiting the Grand Canyon with "let's camp there for a couple of days". Done. Deal. There are a couple of other possible "bucket list check offs" still up for discussion, as the official plan hasn't been totally finalized. We shall see!

DREAMY KITCHENS.

I have recently decided I would like to redo our kitchen. It's already very much vintage, but I think I'd like to choose a color (or maybe two) & kind of go with a theme, rather than the hodge podge of color it is now. Here is my inspiration.

What's for Dinner? CHICKEN RANCH TACOS.

Here's a little secret about me: The hunk doesn't love me because I am awesome at cooking. I am not. We eat mainly veggies & sometimes grilled meat & while I've gotten pretty good at cooking veggies, I don't know how to make a lot of "recipes". I'm the queen of grilled, single ingredient vegetables. Garlic, salt & pepper, olive oil....that's about the extent of the ingredients I'm comfortable using.
That said, I am trying to change that about myself. I feel like I can't be the only one out there clueless in the kitchen, so I've decided to introduce a new feature on my blog: "What's for Dinner?" Perhaps you will follow along & maybe learn something new or at the very least, have a good laugh at me trying to not suck at cooking.

Tonight's recipe is CHICKEN RANCH TACOS. These came out absolutely delicious. The ingredients are super inexpensive & the recipe is crazy easy. And the best part? I finally got to use the crock pot my mom gave us a year ago that I've been scared to touch.

SHOPPING LIST:
-2 pounds raw (not frozen) chicken
-1 can of chicken broth (box is pictured, $1 at dollar store. the box is the same as 2 cans, only use half if you buy the box)
-1 pack Hidden Valley Ranch mix
-1 pack taco seasoning (I like Old El Paso)
-Ranch dressing
-lettuce (I prefer to use romaine)
-flour tortillas

DIRECTIONS:
1. Put chicken, chicken broth, taco seasoning, & Ranch mix in the crockpot. Stir. Cook on LOW for 3 hours.
2. Shred chicken. I used my hands to pull the chicken apart. It's so tender it's easy to do. If anyone has a better idea, please share. That's the best plan I could come up with.
3. Put the shredded chicken back in the crock pot & cook on LOW for 30 more minutes. 4. Drain chicken.
5. Assemble tacos: tortilla, chicken, lettuce, ranch. I served them with white cheese dip & blue corn chips & tomatoes from the garden on the side.
6. Thank me later.

SOME PRETTY THINGS.

I like to reserve Sundays for my "some pretty things" posts because Sunday is my favorite day of the week. Sometimes we have the girls and sometimes they are with their other parents. Sometimes the hunk is away with the band, but usually not. Usually, he's home & we get to do things that we don't usually get around to during the week. I like to go to the river or the farmer's market or stay at home and try out new recipes or do crafty things. Sometimes we catch a Sunday afternoon movie. Whatever we do, Sundays are all about being together around here...and I love that.
Here are some pretty things that made me smile today.
